Started by Steve Chu, Abebe, and Nick Yesupriya as a modest operating using a hot-dog cart to sell Asian steamed bun sandwiches at the Fells Point Farmers Market. The name &quot;Ekiben&quot; is inspired by the Japanese tradition of ekiben, or train station bento box.
